As a medium roast, it carries all of its original flavour as a mild and pleasant coffee. Roasting it darker than medium will introduce more fullness and richness to the cup. Brazil is the largest producer of coffee on this planet and this Santos bean (named after its port) is regarded as to be a consistently good Brazilian coffee. The coffee beans are handpicked and dry processed, which involves casting off the beans from the cherries once dried. This technique allows the sweetness of the fruit to hold through to the cup.
